- Take a pan and heat the olive oil and add chopped onions and sauté few mins
- Next add ginger garlic paste and sauté for few mins now add all the vegetables and sauté for 2 mins
- Now add both soy sauce and red chilli sauce and mix well
- Now add 2 cups water and let it boil. Once it has boiled add the quinoa
- Add some salt and cover the pan with a lid and cook for 15-20 mins
- Take another pan and add 1 tbsp oil and crack the eggs inside and add a little bit of salt
- Keep mixing the eggs until they are all crumbled
- Once the quinoa rice has been cooked add the crumbled eggs on top and mix well
- Garnish with coriander
